May 19th 2021. The day my parents told me we were moving to Mexico. I had lived in Colombia my whole life and didn't want to move but it had to be done.
Upon arrival to Mexico City, one of the things that I missed the most about my country was the food. I cannot tell you how much I dreamed of having a good ajiaco and a crunchy empanada. Even after visiting various Colombian restaurants in La Roma, I could never find good authentic food. Over time, I began ignoring my cravings for Colombian food until they were just distant thoughts. I felt far away from my home country and it made me sad.
Everything changed on a random afternoon. I was shopping in my local supermarket when I suddenly saw something that caught my attention… A bag of Milo. I hadn't seen Milo in a long time and was suddenly transported to my home in Bogota, Colombia. You see, Milo is a staple in every Colombian household. It is a delicious chocolate milk powder that everyone adores.
Feeling excited after buying a few bags of Milo, the first thing I did after arriving home was to prepare myself a batch of my favorite brownies. Milo brownies. The brownies my family has been baking since I was little and taste like my home country. They were what helped remind me of Colombia when I missed it the most.Â
Now, without further ado, I will be sharing my secret brownie recipe with you. The brownies are gooey in the middle and crunchy in the edges. They aren't overly sweet but will still blow your mind. And although a taste of my Milo brownies might not transport you to Colombia, I assure you that my country’s flavors won't leave your mind for a long time.
Milo Brownie Recipe:Â

Ingredients:
2 eggsÂ
½ tablespoon vanilla extract
¾ cup flour
¾ cup sugarÂ
¾ cup Milo powderÂ
½ teaspoon of salt Â
½ stick of butter (63g)
Preparation:Â
Preheat your oven to 180°F/350°C
Whisk together your eggs and sugar until there are no visible lumps..

Melt your butter and add it to the egg-sugar mixture (make sure that the butter is not very hot as it will cook your eggs)

Add your flour, baking powder, and salt to the wet ingredients. Be sure to mix until the dry ingredients are fully incorporated into your batter.Â

Fold in your Milo powder until a homogeneous mixture is formed.   Â

Line a medium sized ramekin (I used two small ramekins) with parchment paper, fill it in halfway with your brownie batter and bake for 25 to 30 minutes.Â

After your brownies are done baking, let them cool down for at least one hour. Then, use a sift to decorate them with powdered sugar or cocoa powder.

I hope you love this brownie recipe as much as I do.Â
