I must admit, I was skeptical at first about making these blondies, but they turned out to be absolutely delicious! The combination of fresh strawberries and creamy white chocolate created a heavenly flavor delight that exceeded all my expectations. On top of that, the fact that the recipe calls for maple syrup as a sweetener instead of sugar makes these blondies a lighter option that isn’t too sweet for sensitive palates; something I personally loved. Strawberry White Chocolate Blondies Recipe:


Ingredients (makes 9):

  • 1 egg

  • ⅓ cup maple syrup

  • ⅓ cup melted butter or coconut oil

  • ⅔ cup milk of choice

  • 1 ½ cup all purpose flour

  • 1 tsp baking powder

  • 1 cup chopped strawberries

  • ½ cup white chocolate chips 

  • I used Hershey’s Cookies 'N' Creme chocolate bars crushed into pieces, which turned out to be an added touch of flavor that fit perfectly with the recipe


Preparation:

  1. Preheat your oven to 170ºC/338ºF

  2. Using a whisk, mix eggs, maple syrup, butter, and milk together in a medium-sized bowl until no lumps remain.

  1. Add the flour and baking powder and mix until a semi-thick consistency is formed in the batter.

  1. Chop up 8 medium sized strawberries (which make approximately 1 cup) and stir them into the batter.

  1. Add white chocolate chips and stir the batter.

  1. Line a medium-sized baking pan with parchment paper and pour the batter into it evenly.

  1. Place your batter into the oven and let it bake for 23 minutes or until it’s cooked (you can stick a toothpick in the center to test it, if it comes out clean, the blondies are ready).

  1. Slice up and enjoy!
